山药概述
山药为薯蓣科植物薯蓣的干燥根茎，冬季采挖；生长于海拔350米至1,100米的地区，多生在山坡、山谷林下、路旁的灌丛中、溪边及杂草中。
淮山作为保健食品，在中国至少已有两千多年，成书于东汉时期，中国现存的最早的药学专著《神农本草经》将淮山列为上品。
它含有蛋白质、糖类、维生素、脂肪、胆碱、淀粉酶、粘液汁等成分。还含有碘、钙、铁、磷等人体不可缺少的无机盐和微量元素，而磷的含量比红薯多一倍，比土豆多二倍。科学分析，山药营养的最大特点是含有大量的粘蛋白，粘蛋白是一种多糖蛋白质的混合物，对人体具有特殊的保健作用。

山药性状
【性味】 性平；味甘，无毒
【归经】 入肺，脾，肾，胃经
略呈圆柱形，弯曲而稍扁，表面黄白色或淡黄色，有纵沟、纵皱纹及须根痕，偶有浅棕色外皮残留；体重，质坚实，不易折断，断面白色，粉性。无臭，味淡、微酸，嚼之发黏。光山药呈圆柱形，两端平齐，表面光滑，白色或黄白色。
